2001: A Space Odyssey - Ape using the bone to murder based on influence of monolith.

Star Wars - Opening credits followed by initial spaceship chase scene.

Most any James Bond 007 movie, especially Goldfinger.

The three here are... really good.

 

I'll say that an opening scene that hooked me in (and that I still consider to be really good) but was followed by a fairly dull movie: Baz Luhrmann's Romeo + Juliet.

 

Using a news report for the prologue to set up his vision of Verona as a weird amalgamation of Mexico City, Rio de Janeiro, and Miami and then immediately rolling into Act I, Scene 1 as a shootout between Benvolio's Montague boys and Tybalt's Capulet gang... *chef's kiss*

 

The fact that Benvolio and Tybalt are hilariously portrayed by Jamie Kennedy and John Leguizamo... just amazing.

The Dark Knight bank robbery scene.

 

Pulp Fiction Restaurant scene.

 

Lord of the Rings battle scene.

 

Another great opening scene is Dusk Till Dawn. Actually it is a great first 30 minutes, but after that point, it is just awful.
