I can't make it...my wife takes oil from cooking bacon or tenderloin and heats it, she then adds some flour and stirs the crap out of it until it's light brown. Adds some milk while continuing to stir then some salt and pepper. I've watched her over 100 times and tried it once...mine was horrible. So I'm pretty sure there is some magic involved that I know nothing about. Good luck

Have been messing with my own creation for a few years and just know the level on the pot I use to get the thickness just right. I do fry the spicy sausage first and then add 3/4 cup of flower to build a bit of a rue and coat the meat. From there it goes from the skillet to the pot and gets covered with milk and a little heavy cream. Add some strained flour from there so it isn't lumpy, plenty of pepper and stir regularly for 10 minutes. Reduce to simmer so it can thicken with a few more stirs along the way. I like a little smoked paprika added with the pepper as well. Far from an exact science, but comes out perfect every time...

We always have 1% milk in house, but not as good for gravy as whole milk or cream.
