How about Borchers from Cooper?

 

Sure he'd be a great choice, and probably do a great job. But as was mentioned before, I can't imagine he'd give up his current gig as Head Coach/AD at a public school and the retirement benefits that go with it to coach and teach at Cov Cath. He's got a great gig at Cooper, and he's building a legitimate power there.
