Marriage and kids have softened me.

Made some turkey chili on Sunday night and plan on eating it randomly throughout the week.

 

Last night, grilled up some lemon garlic turkey breast tenderloins, some potatoes in the skillet, and broccoli.

I am attempting this today. About a 3 pound turkey breast. (Had a hard time finding this at Kroger.) Not clear on the water? My crock pot is smaller, so the breast touches the sides of the pot. Water 1/3 up the side of the turkey? About how much is that? Thanks!

I never measure anything when I cook so hard to give you measurements. Just don't have the water over the breast, but not enough to dry out and you should be fine. I too have trouble finding ones that will fit in my crockpot. Best time is when they are on sale, because they seem to have a variety of sizes then. Hope you enjoy it. It is my favorite way to fix one and SOOOOO easy. Let me know how it comes out.

It turned out great! 5 out of 6 ate it. 4 liked it.

Plenty left over so I think turkey chili for tomorrow.

Broke out the set-it-and-forget-it rotisserie.

 

Did up a whole chicken & new potatoes on the rotisserie, and sautéed some snow peas in olive oil.

I did a pork loin in the slow cooker today topped with pineapple and marinated in teriyaki pineapple. It was excellent! Sides dishes were green beans and sweet potatoes.

Wendy's Ultimate Grill Chicken, Chili and jr Frosty

Had some of the leftover turkey chili last night.

 

Meeting a buddy at Chipotle tonight. Probably going to get my usual there, barbacoa bowl, no cheese or sour cream.

Mixed up a bowl of water and a packet of Good Season's Italian Dressing Mix. Poured it in a crock pot containing some boneless pork ribs. Let that cook low all day. Served with a mix of steamed broccoli, cauliflower, carrots, and squash.

 

Healthy for once.

 

I'll fix that tomorrow.

Pancetta wrapped stuffed pork tenderloin, sautéed mushrooms & onions, and sautéed zucchini with tomatoes.

 

3 lb tenderloin (butterfly and flatten w/ mallet)

3 cloves garlic (crushed)

Sprig of fresh rosemary

3 slices of bread torn to pieces

1/2 cup golden raisins (rough cut)

1/2 lb pancetta thinly sliced (not shaved)

1 small fennel bulb

Salt & pepper

1/2 cup sweet onion (diced)

1/2 stick butter

2 Tbl Olive Oil

Butchers twine

 

Grate the fennel bulb (keep the greens), rough cut the raisins, dice the onions, about 1/3 of the rosemary seeds and crush 2 garlic cloves.

 

Melt butter in a skillet, throw all of that in, and sauté. Mix that with the bread to make your stuffing. Add a bit of water if you need too.

 

Butterfly the tenderloin and pound to an even 1/2" thickness.

 

Lay down 6 pieces of butchers twine about 10" long each.

 

On top of that lay out the pancetta overlapping about a 1/3. Lay out to the length of the loin. It will take 4 rows to wrap the whole loin.

 

Dice up the fennel leaves and spread out on the pancetta. Pluck the remaining rosemary from the sprig and spread on the pancetta.

 

Crush the other garlic and rub on the loin. Then add a little salt and pepper.

 

Place seasoned side down on pancetta.

 

Put the stuffing on the tenderloin and roll it up and tie the strings.

 

Put some olive oil in a skillet and sauté the loin till a little crispy. Deglaze the pan with water or some white wine and save it to pour over the loin at the end.

 

Throw it in the oven @ 325or offset it on the grill for 1:15 - 1:30.

 

Sauté a small onion and about 4oz of sliced mushrooms. Add the dripping from the pan to that and pour over the tenderloin.

 

Yum

 

 

- I have made it with dried cranberries instead of raisins too and it comes out excellent that way too.

Had a chick Filet sandwhich and headed to the Crown room for cheese, celery, carrots, lintel soup. And a few vodka Tonics.
