It was very good. The chicken absorbed more of the smokey flavor than I expected. We could not fit a fifth chicken into the smoker, so it is in the oven this evening.
2 veggie burgers with salsa and some yogurt.

then I cooked the following on the grill: corn on the cob, green beans, and potatoes with cheese and bacon.

Nothing fancy, here.

 

Hamburgers smothered in onions, mixed veggies, tater tots.

I had an elk burger from Game here in Louisville. Elk, cooked medium, with bone marrow mayo, red wine vinegar pickles, sauteed mushrooms, a fried egg, and ketchup. Managed to eat the whole thing without getting my shirt dirty.

 

(My parents brought some visiting relatives down for the evening so we got a TOP NOTCH dinner on the folks. :banana:)

Applebees grilled chicken caesar salad, with buffalo sauce on the chicken quite tasty.

Washed it down with a cold Miller Lite.

Leftover lasagne.

Always better on the second day.

Homemade pulled pork BBQ, cole slaw, sweet potato fries with apple butter and Texas Toast.

Half runner green beans, hybrid honey select corn, cucumber, tomato, vidalia onion and cornbread. Cantaloupe for dessert.

Tonight is grilled ribeyes, fresh corn on the cob, fresh sliced tomatoes, baked potatoes and home grown watermelon for dessert

Smoked chicken salad sandwiches with grapes and toasted walnuts tonight - but last night I had fish fillets in a hot clay pot with rice and spring rolls from a nice Vietnamese restaurant.

 

I don't eat Vietnamese food often but I have never had a bad Vietnamese meal. My wife had the "small" chicken soup ("pho") with vermicelli and was only able to eat about half of it. You can't beat pho as a bargain meal with huge servings, high quality chicken, and plenty of fresh greens an peppers.

After reading your post, I decided to call my wife and ask her to pick up a watermelon and maybe some fresh corn on the cob as well for the weekend. I was trying to think of something to go with pulled pork and chicken salad sandwiches. Thanks for the idea, your dinner sounds great.

I love pulled pork with good coleslaw. I think that my smoker has already paid for itself this summer.
