Meatloaf, new potatoes from our neighbor's garden smashed and broiled crispy brown with olive oil, sea salt and rosemary, fresh corn on the cob, and more watermelon.

Exactly, haha. My wife started making those potatoes not too long ago. We both like them a LOT. But she calls them "Pinterest Pots".

(Hint, you can vary things from time to time a little using garlic salt or seasoned salt instead of sea salt.)

Chicken cacciatore over angel hair pasta, grilled brussels sprouts, olive/feta/spinach bread (from farmer's market on Bardstown Road).

Breakfast for dinner is the kids' fav. Especially if it's pancakes and bacon and a side of high cholesterol. :)

Dinner tonight was salmon and dill scrambled eggs with steamed broccoli and broiled sweet potatos with a maple syrup and olive oil glaze.

Another big win at the TAC house tonight. All 4 of us home for a late dinner. Grilled filets, asparagus. Corn on the cob, Fresh green beans. 2 weeks and we become empty nesters as they shuffle off to college. Appreciating the time together!

I may be there on occasion. Daughter just signed a lease for an apartment in the 2000 block of Douglass Boulevard; Highlands/Belknap area of town. Will be moving in probably this weekend.
