Ribs. Fall off the bone or some "pull" to them?

The Walts post got me to thinking about ribs and how I like them. I know lots of rib places advertise "fall off the bone" as a positive means of getting people in to their restaurant. Me, I don't like them that way. The meat many times gets too soft "mealy". I like a rib with a little snap to the meat with some chew and having to pull the meat away from the bone a little. How do you like yours?

With a son heading to Memphis, an account in Charlotte and an account in Nashville, I'll be honing my ribs taste buds. I'll advise later.

There is definitely a point where too much of the "fall off the bone" quality is not a good thing. If that was all I wanted, I would put them in a slow-cooker instead of smoking them myself or paying big bucks to buy them at a good restaurant. That being said, I like them to be more along the lines of falling off the bone, but still to retain a decent enough amount of texture to let you know you're eating ribs and not barbecue flavored babyfood.

 

All the same, I can definitely still enjoy a rack of ribs that takes a little bit of pull to get the meat off the bones though.

As long as it tastes good it doesn't matter to me if it falls off or I have to pull a little. Love me some BBQ and love me some ribs!

Well, I may be the least picky eater on the planet. As long as it's not overcooked veggies, or overcooked meat, or overcooked anything, I'm pretty much game. :D I don't have any issues with ribs unless the sauce/seasoning sucks. Then, we might have an issue. :D

Want really good ribs at a good price. Go to Dan's Marina in Warsaw on a Saturday. (think they only serve them on saturday) I'd say they are 1/2 way between fall off the bone and still a little stick to them. Sit out and watch the boats go by.

I prefer fall off the rib. MI is my favorite by far. I do like a sweet sauce on my baby back ribs. I can eat most, thugh.

I make mine to fall off the bone. No complaints from anyone.

Not a fall off the rib fan. Like em smoked with a good sweet and spicy rub, and very lightly sauced. I just don't like the texture of rib meat that's falling off the bone.

No preference. Although I will say if I am dressed up and/or at a business meeting, fall off the bone is a must or I won't order them. I am not using my hands, gnawing on a bone and licking my fingers in that type of situation.
