The Walts post got me to thinking about ribs and how I like them. I know lots of rib places advertise "fall off the bone" as a positive means of getting people in to their restaurant. Me, I don't like them that way. The meat many times gets too soft "mealy". I like a rib with a little snap to the meat with some chew and having to pull the meat away from the bone a little. How do you like yours?

Same as you.

I make mine to fall off the bone. No complaints from anyone.

True...

It's about that time...

I've had a hankering for some candy-apple cajun ribs. :walk:

I was waiting to see how you'd sound off in this thread.

Need to have a little pull, if the bone slides right out usually it's really slimy. I think Montgomery INN is garbage and there sauce is what keeps their ribs being mediocre. Give me the smoked ones everytime

Pull off the bone indicates tenderness...fall off the bone is overcooked.

I'm with LOOGY, I want mine smoked.
