June 2, 201511 yr Last night was sandwiches and sweet potato fries. The sandwich was sliced turkey with fig jam (from the local farmer's market) on crusty bread; the last of the farmer's market strawberries for dessert.
June 2, 201511 yr Pulled a Lou Malnatti's frozen pizza out of the freezer and baked it up. Not as good as going to Lou's but better than any restaurant pizza around here. Gonna be in Chicago in two weeks for the Cubs/Reds game. We'll have the real deal while we're there.

June 3, 201511 yr I've got homemade chicken tikka masala finishing off on the stovetop right now. It's not dead-on authentic, but it sure is great all the same. (2) Large Chicken Breasts, Cut Into 1" Cubes (about 1-1/2 pounds) (1) Cup Chopped Onion (1/3) Cup Heavy Cream or Plain Yogurt (1) 14.5 oz can Petite Diced Tomatoes, Undrained (2) Tablespoons Lemon Juice (2) Tablespoons Butter (1) Tablespoon Cornstarch (2) Teaspoons Paprika (the hot smoked variety if you have it) (2) Teaspoons Garlic Powder (1) Teaspoon Garam Masala (can be purchased in most spice aisles, and virtually any specialty store) (1/2) Teaspoon Cumin (1/2) Teaspoon Mild Curry Powder (1/2) Teaspoon Salt (1/2) Teaspoon Crushed Red Pepper Flake 1) Melt butter in a large skillet over medium heat. Add chicken, onion, and lemon juice and cook until chicken is no longer pink. 2) Add paprika, garlic powder, garam masala, cumin, curry powder and salt. Cook 2-3 minutes. 3) Stir in tomatoes until well mixed; about 2 minutes. 4) Gradually stir in cream/yogurt and cornstarch until evenly distributed, and bring to a boil. 5) Reduce heat to low, add in red pepper flakes and allow to simmer for 5 minutes.
