May 24, 201511 yr Today we are having spiral country ham, fresh lettuce out of the garden that I will wilt from the juice of the country ham, with green onions. Fried corn, tomatoes,onions, and cucumbers with basil and feta cheese. Watermelon for dessert. That's not fair.

May 24, 201511 yr Think I'm going to swipe some of my neighbor's charcoal — forgot to get some at the store earlier and he owes me anyway — and cook up some brats. Got some really good Dutch mustard that goes great with grilled brats. May even cut up some onions and peppers to go with 'em. They import Boetje's in Rock Island, Ill., and you can get it at stores in the Quad Cities area. It is available online, but obviously more expensive. We usually pick up a case when the family goes up there every year for Christmas.

May 26, 201511 yr Sunday Bacon wrapped shrimp and bacon wrapped scallops on the barbie. Grilled corn on the cob, cole slaw, tater salad, and chocolate cake. Monday Italian sausages w/peppers & onions. Grilled corn, green beans, pasta salad, and hot fudge sundaes.
May 26, 201511 yr Im interested in the no bun route??? I basically don't do carbs, no bread, potatoes, pasta, or rice. What carbs I do get comes from the beer or three that I may drink on a weekend and a couple of bourbons, neat. I initially did it for and with my wife who had to get her A1C down in a hurry. Consequently, since mid January I've lost over 25 lbs. with no portion control. My kind of life style change. Sunday, I made burgers, sliced onions and tomatoes, tore off romaine lettuce leaves, and put out the normal burger condiments. I bought buns for my sister and niece, who came over for dinner, and made tater tots in the oven for them. Leftover buns and taters went home with them. When I made up plates for Mrs. S and myself, I took the veggie portions we would normally use on a burger, tore the romaine into smaller pieces, chopped up onions and tomato slices, put them in salad bowls, and added mayo. We had a boatload of leftover green beans, that had been cooked with bacon, from the day before to complete the meal. When I use iceberg lettuce, I put the mayo on the burger, add the onion and tomato slices (without chopping them up), and wrap it all in a lettuce leaf. It comes out kind of like a Jimmy John's Unwich. Messy as hell, but it tastes good.

May 27, 201511 yr Between power outages, I fried up some bacon, crumbled it, and added it to fresh spinach I was cooking in olive oil, sea salt, and fresh garlic cloves. I then fried some 3/4 inch pork chops, simply black peppered, in the bacon grease.
