I’ve been disagreeing with MJ too much recently for my liking, but any sort of shrimp and noodles dish is my answer.

Spaghetti and Hungarian peppers sauteed in olive oil.

Easy one for me, lasagna. A good meat lasagna is one of my favorite entrees of all time

Pizza ain't pasta. Pasta is boiled it in water.

 

I think @jvdfc nailed it with his comment, but thinking about it from the perspective of "What pasta dish would I miss the most if I was told I could never have pasta again? ...I've got to go with good ol' spaghetti and meat sauce. We have that at my house probably once every 10 days. I don't know if I could get sick of it. Then after spaghetti and meat sauce comes lasagna, and then carbonara.

I prefer it with meat, but I was helping with a high school retreat some years ago being held at St. Ann's Convent in Campbell County (the one where they shot the scene shown in the movie posters for Rainman)...the nuns had a vegetarian lasagna made with white cream sauce, shredded carrots, sliced mushrooms, and sliced zucchini. Absolutely knocked my socks off. It doesn't out-do meat lasagna with red sauce, but WOW was I surprised how great the vegetarian version was.

I left off my favorite meal of all time. For some odd reason, I was thinking Italian when I saw this thread and @Colonels_Wear_Blue's comment made me rethink.

 

Chili and spaghetti or Chili-Mac. NOT Cincinnati style, but the chili everybody else in the country eats.

 

Don't get me wrong, I like Cincinnati style chili and spaghetti, but it's not the chili and spaghetti I was raised on and Mrs. S has perfected.

Tagliatelle bolognese.

 

Spaghetti carbonara.

 

I'm going to one of those, entirely dependent on whether I want tomato sauce or not in the moment. Definitely my two favorites.

This is a really tough question.

 

My only remark is there is not really a wrong answer, but the pasta must be fresh. That makes all the difference.

 

I am a fan of tortellini with a nice pesto.

Lasagne, my wife's baked Ziti and some Mexican dish she makes with large stuffed pasta shells.

My favorite is Lasagna.

Fry up a 1lb package of Italian sausage links. Then light sautee of some fresh shrooms and red bell peppers and onions. Boil some rotini, and mix it all up with some good red sauce seasoned with garlic, basil and oregano, layer on the mozzarella and Romano, and bake.
