OK, so crazy night. Went to see my cousin who is near the end, very sad. Mrs. TAC was heading to dinner with her sisters at Anchor in Cincy. As I was dropping her off, she found out the rest were running late (no shock to me). She asked me to join her for a drink. I did and ordered a dozen oysters on the half shell and slurped down a couple cocktails. I made my way over to the BOK for the 9th region finals. Walked in right before the fireworks and had a seat 4 rows back. Loved the game. Stepped out right at the end of the game. Started heading home and decided since dinner was only an appetizer I should eat. So, Knotty Pine it was. Tuesday night, Crawfish broil again!

Hope Mrs. TAC enjoyed her dinner and the play. I sure had a wonderful evening minus the start.

Been eating homemade ham and bean soup all week after getting home later from the 9th Region games.

Thinking pork chops on the grill with a baked potatoe for tonight.

You must be related to my husband.:D This is one of his favorite meals, especially the chocolate pie.

Bonefish!

It was bang bang shrimp night, never knew they had one?

seared Ahi, than shared mahi mahi with lobster and rice.

Extremely easy. Let chicken sit at room temp for 45 minutes after taking out of packaging. Preheat oven to 425. Take out extras in cavity and fill with fresh thyme and 4-5 cloves of garlic. Salt and pepper liberally and place a 1/2 stick of butter sliced into 5-6 pads and place on top of bird. Use about 2-3 teaspoons of extra virgin olive oil to line the bottom of pan. Put in the veggies you want, just about anything will work. I used broccoli, carrots and mushrooms. Tie the legs, fold the wings under the back (breast is up). Put in the oven and about 70-90 minutes, it is done (depends on oven, I find them all different). Check for internal temp of 165. Let it rest (really important) for 15 minutes and go to carving.

 

I paid $9.63 for a 6-1/2 pound roaster at Kroger. You cannot beat that. It was tender and flavorful. Have a bit left over to make chicken and noodles and the daughter to take to work for lunch. The lovely lady boiled the bones to take off the excess meat clinging and will use those with the noodles.

 

This. The Publix I went to didn't have any roasters, so I used a 5lb young frier. Came out fantastic. Thanks.
