These are often marked down at Kroger(s). An easy, semi-foolproof recipe/method would be much appreciated, as this would be both economical and tasty.

Extremely easy. Let chicken sit at room temp for 45 minutes after taking out of packaging. Preheat oven to 425. Take out extras in cavity and fill with fresh thyme and 4-5 cloves of garlic. Salt and pepper liberally and place a 1/2 stick of butter sliced into 5-6 pads and place on top of bird. Use about 2-3 teaspoons of extra virgin olive oil to line the bottom of pan. Put in the veggies you want, just about anything will work. I used broccoli, carrots and mushrooms. Tie the legs, fold the wings under the back (breast is up). Put in the oven and about 70-90 minutes, it is done (depends on oven, I find them all different). Check for internal temp of 165. Let it rest (really important) for 15 minutes and go to carving.

 

I paid $9.63 for a 6-1/2 pound roaster at Kroger. You cannot beat that. It was tender and flavorful. Have a bit left over to make chicken and noodles and the daughter to take to work for lunch. The lovely lady boiled the bones to take off the excess meat clinging and will use those with the noodles.

I have always done this with most meats. You can stay closer to the requested times by doing this and it lets any moisture on the outside of the meat evaporate. Therefore, the seasonings are better in incorporating with the meat. I also pat the meat down with a paper towel when I get it our of the fridge.

 

I also never rinse the meat just take it out of the packaging, pat it down season and let it sit for about 45 minutes. I try never to freeze meat although sometimes deals give you no choice or the stock you have.

 

I am fotunate, I have time to go to Findley Market or Krogers daily and pick out my meals. Usually, there is a deal or 2 on meat.

I am roasting a 5 1/2 chicken for supper tonight. I made homemade dressing. I took half the dressing and added 1 cup of small shrimp. Then I stuffed large mushrooms with the mixture and sprinkled parmesan cheese on top. Also a Asparagus salad with bacon balsamic dressing .

The lovely lady is travelling all week, my daughter and granddaughter are heading home. So nothing too much for me. I'll do some leftovers or grab something on the way to the 9th region tourney the next two nights.

Mrs. TAC has some Crock pot goodies in right now since little TACster is in town and needs to beef up a little.

Kept it simple again, wife made bacon carbonara, while I ran down to applebees to grab some blondies for desert. If anyone has a recipe handy for an authentic applebees Blondie I would damn near pay you for it hah.

Pork tenderloin sammich because that's how my grandma always said it.

It was a zero effort night, but it was good.

 

Picked up a rotisserie chicken, filled a container at the salad bar, and a loaf of French bread at Kroger.
