NY Strip rare plus to Medium rare, depending on the restaurant. The strip seems to have the best taste, IMO. I've never heard the terms "Pittsburgh" or "Chicago" rare but I've had steaks like that and it's awesome. I think I may try and order it like that next time I'm out. As for A1, I use it about 20% of the time. Sort of depends on what I'm feeling at the time.

Dry aged bone in ribeye.....otherwise known as a Cowboy......with a nice compound butter on it.....rare of course.

 

Bang for the buck, it's hard to get a better value than with a Flat Iron or a Culotte.

A week doesn't go by in my home without a flat iron steak.

I'm a New York Strip guy with Ketchup.

 

When I was younger I'd always put ketchup on steak. But that was when dad would cook them and he cooked them the way that he liked. Now that I'm older and do my own grilling, I cook them nice and juicy. Never use ketchup or steak sauce.

I have one rule for cooking steak. Sear everything.

I'm with ya...I'll more than willingly eat any cut of steak out there. I'm honestly kind of surprised at the fact that rib eye is taking the lead though. I kind of figured filet or strip would run away with it.
