Hahaha...well, when I had "sweet meats" (of the beef variety) they were big enough that they marinaded, breaded, and fried them and served them as a side, and one was plenty to do the job.

:lol: You should try goat, it's really quite good. Ostrich is also really tasty!

My uncle was a 1st Air Cav in Vietnam...his version was "a handful of rice and a fish head". Pretty much the same difference.

You don't know what you're missing. Do you like lamb? It's not too different than that. Like anything, it depends on how it's prepared.

Groundhogs have scent glands that must be removed. They are at the shoulders and at the lower back. Outside of that they can be prepared most anyway you want, but slow cooking is recommended as they are very musclular little buggers.

 

 

I've had them two ways.

 

One which involved a long process, brining, boiling, chopping, and stewing. It was good but too much effort.

 

The other was 10 hours in a crock pot with my homemade bbq sauce. Simple and good.
