Ribeye or a Porterhouse I also enjoy venison steaks, especially the tenderloin (backstrap), imo a well seasoned and well prepared (Medium rare) venison backstrap cannot be beat. The waitress gets all upset and warns you not to order anything less than medium. I have never had a problem at any of our restaraunts here in ordering medium rare. I once told a waitress to tell the cook "Just put it on the grill, count to 10, then flip it and count to 10 again then bring it to me." You should have seen the look I got for that one.
