I'm a big fan of Hasselback potatoes, but I rarely make them cause they are bit of a pain to prepare. 

I'd guess I eat fries most often followed by baked potatoes.  This would never win a popularity contest but my Grandma's German potato salad is out of this world good.

All potatoes are great, but I really enjoy hash browns.  The shredded kind.

3. Skins.

4. Potato Soup.

5. Potato Cakes.

6. Potato Salad...my wifes.

7. Shredded hash browns.

8. French Fries.

9. Mashed. 

10. Potato Candy.

I always eat the skin unless it is encrusted in salt, as some places do.

What makes potatoes so wonderful is the ability to mix it with virtually any protein. Top notch steakhouse steak + a potato to combine each bite with = bliss.

My only beef on potato skins is often times there isn't a lot of potato included.

There is a fine line between not enough and too much. And they have to be cooked well.

A lot of important truths in your statement.  I find most places struggle to strike the right balance needed for skins.  When they're done right, they're hard to beat.

Still, if I could only eat potatoes one way for the rest of my life, it's fries for me.
