Dinner: what did you have?

In Kentucky. I have a professional kitchen, can grill anytime I want.

A bit out of my home appliance price range, but I like that.

It wasn't cheap, but I have used the heck out of it over the last 15 years cooking for 4 boys. It's the one thing I'll miss when we sell the house.

Got to specify for us! My go to is roasted chicken on wheat, then I go from there depending on what I want. That sandwich is so versatile.

Nothing dramatic. Turkey for Mrs. S and Club for me. LTO on both, mayonnaise on her's, salt-n-petter on mine. Chicken soup for Mrs. S, Ms. Vickie's Jalapeno chips for me.

Just started a crock pot full of MBWC41's enchilada meat from the slow cooker thread.

We'll be having it for dinner. Should be ready about 6:00.

Had a pot roast in the crock pot for a while yesterday with some french onion seasoning, potatoes, and carrots. Probably one of my favorite meals and easiest to prepare.

Had the slow cooker pepperocini roast yesterday, always good.

Made some dip over the weekend velveeta mexican cheese, roll of sausage, jar of salsa, jalapenos.

Tonight is Breakfast Night.

Waffles, bacon, and omelettes.

Why? Because I'm out of ideas.:lol2:

And it's too dang cold to go out and get anything else.

AND---I know my kids will eat it.

I had some leftover broccoli and smoked pulled pork. Threw them in a bowl, added a can of chicken noodle soup and a cup of rice.

BTW, Mrs. S is watching the grandkiddies over in Apopka this week. I'm baching it and eating like it.

Last night we had cube steak and gravy in the crock pot, with mashed potatoes, garden canned green beans, biscuits and banana pudding. Tonight will be Fried Cod fish, cilantro cole slaw , mac/cheese, cornbread and honeybell oranges.

Had a visitation to attend, so went to watch first half of UK game.

Pizza & Wings, plus beer. Not healthy but effective.

Tonight Chicken Enchiladas.

Sprinkled a 4lb pork butt with chipotle powder, cumin, and garlic. Let it sit in the fridge for awhile. Put it in the crockpot on low for 7 hours with a jar of mango/peach salsa. Shredded and cooked for another hour on low.

Made cilantro lime rice in the rice cooker. Assembled naked burrito bowls with rice, black beans, pork, guac, and Mexican cheese.

Feasted like kings and queens...

Didn't get done with my day til after 9pm yesterday, so stopped in at Chipotle and got a Barbacoa bowl. Skipped the cheese, sour cream, and guac, so it was only 575 calories.

Looking forward to having time to cook something at home tonight.

Fried up 1lb of ground beef seasoned with taco seasoning and a pinch of garlic power. Ate half of it with with tortilla chips. Ate the other half for breakfast this morning, on wheat bread.

At least the wheat bread was healthy.
