April 23, 201511 yr The best big old Bacon cheese burger. Each were at least 1/2 lb. I only buy my ground chuck at the Fresh Market in Lexington. I chopped up my bacon and placed it right on top of the raw burgers. I got a cast iron skillet hot and placed the burgers with the bacon side down. This frys up the bacon and the burger cooks in the bacon fat. I topped mine and my husbands with two huge chunks of velveeta cheese and on my sons blue cheese. I toasted the buns, ( I buy Bunny deluxe buns), and dressed them with mayo, onions and tomatoes.
April 25, 201511 yr Last nights dinner. Got this from a Midwest Living magazine. Modified it just a hair. 16 oz Morels - halved 4-6 oz ramps - coarse dice 6 oz prosciutto - chopped 1 1/2 cups Fresh or frozen peas 2 Tblsp butter 1/4 cup chicken broth 1/4 cup white wine 1 cup whipping cream 1 1/2 tsp fresh thyme Salt & pepper 12 oz linguini 1/4 cup fresh Italian parsley - chopped Put linguini in a pot to cook. Saute morels and ramps in butter till tender, then remove. Throw in the prosciutto just to render out the flavor. Minute or so. Remove. Deglaze the pan with the white wine, then add the stock and cream. Stir constantly until thickened. Add peas, morels, and thyme. Stir to combine. Cook 3-4 minutes. Salt and pepper to taste. Drain pasta. Do not rinse it. Combine pasta with parsley and sauce. Serve with Parmesan cheese and crusty bread. If you can't get ramps. Sub a small leak and a clove of garlic.
