I'm going to give this a try. Baked potatoes during the summer without heating up the oven. :thumb:

 

Slow Cooker Baked Potatoes

 

Serves 5-6

Ingredients

 

  • 5-6 baking potatoes
  • 2 tablespoons extra-virgin olive oil
  • kosher salt and freshly ground pepper, to taste
  • 1 cup sour cream
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup green onion, chopped
  • carrots, sliced optional
  • aluminum foil

Directions

 

  1. Take a fork and pierce the tops of your potatoes in several places.
  2. Rub each potato with a small amount of olive oil and wrap individually in aluminum foil.
  3. Place foil-wrapped potatoes in slow cooker and cook on HIGH for 3-4 hours, or until fork tender. (Cooking time can be shorter or longer, depending on the size of potatoes)
    Note: you can also cook on LOW for 8 hours.
  4. Remove potatoes from slow cooker and carefully take off and discard aluminum foil.
  5. Cut a long slice into the tops of potatoes and push the two ends together to open the potato up.
  6. Garnish with carrots (optional), sour cream, cheddar cheese and green onion, and serve immediately.

Tried this one yesterday and was pretty good.

2-3 pounds pork ribs

4oz soy sauce

3-4 tbs worcestershire sauce

2 tbs extra virgin olive oil

garlic powder

onion powder

cook on low 6-8 hrs

finish in oven on 350 for 20 minutes with whatever sauce you like

Hungarian Goulash

 

1 to 1-1/2 pounds small red potatoes, cut into 3/4" pieces

5 pieces of cooked bacon, crumbled (can use two 3 oz packets of real bacon bits)

1 pound of ground turkey or ground beef

1 small onion, chopped

2 large carrots, chopped

1 green pepper, chopped

2 Tbsp smoked paprika

2 bay leaves

1 Tbsp caraway seed, crushed

1 - 14 oz can beef broth

1 - 8 oz can tomato sauce

1/4 cup water or beer

Salt & Pepper to taste

 

Brown the ground meat and onions together in a skillet, and then add along with all of the other ingredients into the slow cooker. Cook on low heat for at least 6 hours. Serve with a dollop of sour cream in each bowl.

Time to go back thru the recipes. I am breaking the slow cooker out.

I know the slow cooker is good for chili, stews and soups...traditional fall/winter meals...but I like using is just as much in the summer so I don't have to fire up the oven as much and get my kitchen too warm.

Yep, just posted an invitation to all in the college football thread.

Ok this past weekend's tailgate included a slow cooker again.

 

I took a 6lb roast beef (what ever is on sale - I used a bottom round)

 

Removed the bulk of the fat and put the roast in the crockpot.

 

Mixed together:

2 14oz cans of beef broth

1 16oz jar of peperoncini rings juice and all. I diced it up very fine.

1 8oz jar of Italian Giardiniera (drained). I rough diced these to leave them pretty chunky.

2 envelopes of zesty italian salad dressing mix

 

Poured all of that over the meat, put the lid on, and set on low for 12 hours.

 

-Took the meat out and shredded it all up.

-Skimmed the fat off of the juice(wasn't much), and pulled out about 1/3 of the juice out for dipping.

-Put all of the meat back in the crockpot to keep it hot.

-Got some of those long french loaves from Kroger. Baked them right on the grill.

-Sauteed up some sweet peppers and some hot peppers.

-Cut the loaves into 4 sandwich size rolls.

-Sliced open a piece of crusty bread, stuffed it with beef, peppers of choice, and shredded cheddar cheese. Had little bowls of juice for dipping.

 

Dang that was good.

2.5 pounds ground beef. I mix in one of those onion soup things, and half to 2/3 of "pringle" type "can" of bread crumbs, half a cup of milk, mix it all up and then form into patties. dip em in flour and then fry them in a skillet on each side to get that "crust". Stack them in slow cooker.

 

Saute some sliced mushrooms and onions. in a bowl, pour one of those cardboard things of beef broth. Add cream of mushroom soup, and cream of chicken soup, and the mushrooms and onions and one of those mixes of aujus. Some worchestire sauce too. mix it all up, pour it in slow cooker. 4 hrs on high.
