I don't really cook by strict recipes. I'm more of a "feel" type of cook.

 

But here's the basics for a six-quart pot:

 

Boil down a ham bone in about five quarts of water to make stock — should yield about 3 1/2 to 4 quarts

Remove the bone once it's done its thing

Add one onion julienned

I often use a pound of carrots, but I cut the pieces up pretty big — I like mine chunky

One big jar of Randall beans

half a pound of ham, cubed — less might be needed depending upon how much meat was left on the ham bone

about a quarter-cup to a half-cup of hot sauce

crumble up some dried red chiles

2-3 spears of celery, chopped

I might add some diced tomatoes if I'm feeling froggy

 

Simmer until it's right — 2-3 hours seems to work

Finishing up this recipe as I type:

 

Crock Pot Cream Cheese Chicken Chili

(that's a mouthful!)

2 chicken breasts, still frozen

1 can Rotel tomatoes

1 can corn kernels, do not drain

1 can black beans, drained and rinsed

1 pkg. Ranch dressing mix

1 T cumin

1 t chili powder

1 t onion powder

1 8-oz pkg. cream cheese

Put the chicken in the crock pot.

Top with the tomatoes, corn,

the drained and rinsed beans,

ranch dressing, cumin, onion and chili powders,

stir to combine then top with the cream cheese.

Cook on low for 6-8 hours, stirring one or twice

to blend in the cheese.

Shred the chicken into large pieces

and serve over rice.

Can also serve in tortillas or taco shells.

Serves 4

I'm looking for some good crockpot recipes. We eat out way too much. My wife and I both work, and the kids have a busy schedule that we probably only eat a home cooked meal 2-3 times a week. We need to utilize our crockpot more so we can prepare a meal in the morning before work, and have it ready for us when we get home from work, and running the kids to their various activities. I would love to see some of BGP's favorite crockpot meals and recipes.

Think I'm gonna slow cook a pork butt and pull it. Then make Cubans for the tailgate this weekend.

White Chicken Chili

 

4 or 5 chicken breasts

A jar of salsa (choose your heat)

Cup or can of chicken stock (depends how thick you want it)

3 cans of Great Northern Beans

The salsa is the key flavoring ingredient, so use a good one.

 

 

My favorite that we make is Pork Barbacoã. It's one of my wife's Skinny Taste (something like that) recipes. Pork Loin, garlic powder, Coke Zero, chipotle peppers in adobo sauce, green chilies, etc. Gotta cook the pork loin all day in the Coke with a little water and garlic powder. Then shred and put in everything else the last hour or two. It makes awesome tacos or burritoes, or just a standalone meat.

 

I have made this twice.

 

Once just as it is for soup.

 

Then a second time I added a packet of taco seasoning and made burritos. I thickened the juice with some corn starch and used it as sauce over the burritos.

 

It was excellent both ways.

3 (14 ounce) cans chicken broth

1 (10 ounce) can cream of chicken soup

1/2 cup finely chopped onion

1/4 teaspoon black pepper

Salt to taste

1 (8 ounce) package cream cheese, softened

I forget what's in the thread now but I made a potato soup that turned out very good and very easy:

 

1 (30 ounce) bag frozen cubed hash brown potatoes

3 (14 ounce) cans chicken broth

1 (10 ounce) can cream of chicken soup

1/2 cup finely chopped onion

1/4 teaspoon black pepper

Salt to taste

The cream cheese makes all the difference. This is similar to my recipe love it.
