I forgot the bacon bits also. I buy the real bacon bits in the package but you could cook your own.

 

Directions:

Put the potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and some bacon bits. Add a pinch of salt and pepper.

Cook on low for 7-8 hours or until potatoes are tender.

An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving.

Once the cream cheese is completely mixed in, it's ready to serve.

Top with cheddar cheese and some more bacon bits.

 

I actually like it better the next day but good either way.

I forget what's in the thread now but I made a potato soup that turned out very good and very easy:

 

1 (30 ounce) bag frozen cubed hash brown potatoes

3 (14 ounce) cans chicken broth

1 (10 ounce) can cream of chicken soup

1/2 cup finely chopped onion

1/4 teaspoon black pepper

Salt to taste

1 (8 ounce) package cream cheese, softened

 

Did this today, with the bacon bits. Fantastic. If it's better tomorrow, I can't wait.

My wife made a pretty awesome chicken dish in the crockpot this past Thursday:

 

(1) 8 oz tub sour cream & onion cream cheese. She used the 1/3 fat version to keep it a little healthier.

(1-1/2) tablespoons of butter/margarine

(1) 10.75 oz can of condensed golden mushroom soup (regular cream of mushroom works fine too...golden mushroom just has a little more taste to it)

(4) chicken breasts

(1) Italian seasoning packet

 

Combine the cream cheese, Italian seasoning packet, butter and mushroom soup in a bowl, microwave them for about 90 seconds until you can mix them all together. Put the chicken breasts in the crockpot and pour the other ingredients over the chicken. Cook on medium setting for about 8 hours. Goes well over rice or noodles. Crazy good.

With the championship game tonite I started researching Chicken Wings. I saw some recipes to do them in slow cooker, anyone try this? It is too late for me to do it for tonight but would like to know if anyone has done it.

I have a turkey breast in mine right now. We've found this works really well. Slice some off for dinner on night one then we typically make a soup/stew/chili with it on night two --- often in the slow cooker as well.

Won't be home until late. Will give them a shot another night and report back!

I had some REALLY good bean soup a couple weekends ago. I'd like to try to make some of that some time, with some kind of meat in it.

We have in a chili right now that I prepped with some some cumin, cinnamon, and Guiness. Put it on simmer at 6:45 this morning and should be ready for me when I get in tonight from work.

The wife leaves town for the weekend on Friday, so I'm thinking some spicy chili for the weekend.

Made a kind of half-slow cooker pork chop recipe that turned out pretty awesome.

 

Cracked Pepper Crock Pot Pork Chops

 

Brining Ingredients

(1) 14.5 oz can vegetable broth (about 2 cups)

1/2 cup salt

1/2 cup brown sugar

2 Tbsp black peppercorns

3-1/2 cups ice (about a pound)

4 thick cut bone-in pork chops

Crock-Pot Ingredients

(2) small granny smith apples, cored and sliced into small pieces

(1) large onion, julienned

(1) 14.5 oz can chicken broth (about 2 cups)

2 Tbsp olive oil

1 Tbsp coarsely ground black pepper

2 Tsp salt

1 Tsp dried thyme

 

Crack 2 tablespoons of peppercorns slightly, either with a mortar and pestle, or by placing in a baggie and smacking them with a meat tenderizer. Combine peppercorns in a medium saucepan along with the vegetable broth, 1/2 cup salt, and 1/2 cup brown sugar. Cook on medium-high heat, just until the salt and sugar dissolve, then remove from the heat and add the ice. Place the brine along with the pork chops into bowl, cover, and refrigerate overnight. A 2 gallon Ziplock bag will also work.

 

Remove the chops from the brine, rinse, and pat dry. Season on both sides with the kosher salt and set aside. Place the apple slices in the crock pot.

 

Heat 1-1/2 tablespoons of the olive oil in a large saute pan over medium-high heat, and cook the pork chops on both sides until golden brown - about 5 or 6 minutes per side. Once browned, place the pork chops into the crock pot on top of the apples.

 

Add the remaining 1/2 tablespoon of olive oil to the pan, add in the onions and saute until they begin to brown - 3 to 4 minutes. Add the chicken broth to the pan to deglaze, along with the black pepper and thyme. Stir to combine, and once combined, transfer this to the crock pot. Cook on low 6-8 hours, or until the pork is fall-apart tender.

 

Goes great over mashed potatoes or egg noodles.
