As I was eating my steak this evening.....

Featured Replies

I screwed up some steaks I grilled at my house before the Danville/Bardstown game last year, and offered A-1 to my guests, including Jim Schue.

Normally, a steak should be torn off the cow's hind end and have a lighter run over it a few times. It might possibly be marinated pre-flame in Lea&Perrins, but I do that for color and blood jettison as much as flavor.

Steak sauce on burgers is acceptable. We have a local butcher shop called Boone's whose steak sauce is made with sorghum molasses and is smoked very nicely.

And if I recall correctly, myself, AA and TTC had no desire whatsoever to use the A1, and had no complaints at all. You're too hard on yourself. :thumb:

Has anyone noticed that it is getting harder to get a rare or even medium rare steak out? Several places that I visited in the last couple of weeks have had disclaimers that meat will be cooked to medium or higher. Due to Health concerns!

Let me worry about my helath. I'll sign a waiver. WT.....

I have noticed this. It seems they say that with hamburger orders. I will tell you this...if ANY restaurant tells me I have to eat my steak, burger medium or higher..I am walking out and won't be back! I refuse to eat well done steak or burger. It taste just plain awful.

Also for the record...I like sour cream on my steak too!:lol:

Yea, I wouldn't patronize a restaurant that didn't allow me to get my steak rare or medium rare. But I have never seen a place witha restriction like that. It sounds to me like they don't really know what they are doing.

I've never seen a restaurant that refused to cook it rare or medium rare. I have seen disclaimers that the consumer is responsible for the risk if they request it cooked as such.

Red Robin would not cook my burger MR. Outback says they will but their MR is closer to M. I was in a local type steakhouse out of town last week that would not go lower than Medium. They all blamed the Health department standards. Just like Cracker Barrel will not do eggs Sunny side up.

I appreciate all of these safety standards as I will be saving money that will allow me to cook out more. I will not spend my money where I cannot get my food the way I like it. So I will not be eating out as much!

Stay away from the chains and you should be able to get your food cooked how you like it.

I have found that most restaurants now a days won't cook a burger less than medium, but will cook a steak rare. They claim that the health department requires that they cook them at least medium. Which is a misinterpretation of the health code.

After the Hudson meat company fiasco with Burger King, the health code was changed to say that: ground beef that is cooked from a frozen state to a done state must be at least 145 degrees (basically medium). The standard was truely put in place for fast food restaurants, as most full service restaurants use raw meat that can be smelt and touched to identify if it is bad.

But a lot of restaurants, in order to protect themselves from potential lawsuits have simply implemented the medium policy.

If you want a good burger in Lexington, go to Saul Good's. They fix it any way you like.

I have never heard anything about this, care to elaborate what exactly happened?

What IS appropriate steak company?

Truffle butter

mushrooms

sprig of rosemary

Sauteed mushrooms on the side are good.

I occasionally enjoy a steak done "Oscar Style" with Bernaise Sauce, crab meat and asparagus but I much prefer a good steak plain served on a very hot buttered plate.

At my restaurant, medium is the lowest we're allowed to go on burgers. We can do medium rare on our steak sandwiches, but that's kinda hard to do, because they are pretty thin.

I'm not sure I understand the attitude of those who proclaim a certain way is the only way to prepare and eat a steak. Why would anyone care how somebody else prefers their meal? They obviously like it the way they order it, so who cares?

And then there is the issue of sides and sauces. Why is mushrooms or bernaise or sour cream or butter OK with a piece of meat, but A1 or ketchup or other sauces are taboo? Doesn't make sense to me.
