One thing that I can say with confidence...second day or even third day Chili is always better than fresh made chili.

 

I'm currently on day three of my chili and it always seems to get better each day!

That is caused by the leeching of flavor from the vegetables and spices.

 

I always recommend that chili be fully cooled and refrigerated, then reheated. The cold constricts the veggies and squeezes out flavor. The heat melds them together.

 

It's the same principle as bourbon aging.

I always make chili with ground venison. Love, love, love it.

 

I either make it cincinnati style or super hearty with tons of beans and corn. I don't have a set recipe though. I use McCormick spice packs usually.

So I want to try making white chicken chili in the next night or two. Never made it before. Who wants to tell me what the best recipe is? :D

I think this one kind of died out. If you look back through there are some great white chili recipes. I believe mine is on page 2 or 3.

I have several recipes for chili. We eat quite a bit during the cold months. This is a great one that takes very little time and tastes amazing.

 

INGREDIENTS

3 slices bacon, diced

1 medium onion, chopped

3 cloves garlic, chopped

1 pound ground beef

3 dashes Worcestershire sauce

1 teaspoon cumin

1 teaspoon chipotle chili powder

1 teaspoon dried oregano

1 can (16-ounce) crushed tomatoes

1 can (16-ounce) black beans

 

INSTRUCTIONS

Add diced bacon to a heavy-bottomed stockpot over medium heat. Cook until crispy, then add in onions and garlic and cook until tender. Add ground beef and cook until done. Drain off most grease and place ingredients back into the stockpot over medium heat.

Add seasonings, tomatoes and black beans. Reduce to a simmer and allow to simmer for about 35 minutes.

I'd love to have the recipe for Texas Roadhouse's chili. It's just about perfect IMO.

I took second place in a small contest back in January with a Paula Deen recipe which included cocoa powder. I got jobbed, but it's the best chili I've ever made. Chocolate Chili Recipe : Paula Deen : Food Network

All Cincinnati chili has cocoa powder or cooking chocolate in it.

 

And cinnamon I believe.
