August 1, 201610 yr :lol2: :lol2: For now my plan is to do it where I stored all the pickles and salsa I make. She never goes back there. Probably be a few months before she noticed. I used a similar approach to my beer cellar with much success. Though most people make a curing chamber out of an old fridge. Which, if I enjoy it will be the next move. I've seen plans and how to's on how to dry age beef in old refrigerators too.

There's 125 or so recipes, and it shows all the basic principles you will need to make a good product. I think once I move to Florida and quit traveling so much, I'm going to try to get serious about it. This is the best info I've seen for building a chamber. meat curing at home – the setup – Wrightfood There's a lot of YouTube stuff too.

That Wrightfood blog is where the lonzino recipe is I want to try. It seems like one of the simpler ones to try.
