August 1, 201610 yr Author I knew what he was talking about (there are quite a few spots around town in Louisville that have specialty charcuterie boards), but I'm clueless when it comes to making my own...beyond buying some fancy cheese and sausage and setting it out on a cutting board at a party.:lol: :lol: My dad's processed his own game into sausage and jerky for as long as I can remember. Seems like a natural extension.

Several types look very easy to make and could be aged in most people's basements. If you get serious a curing chamber looks to be an easy investment to make -- can be made out of an old fridge. Gosh...I can't wait to tell the girlfriend I need a curing chamber over by the washer and dryer!

Probably be a few months before she noticed. I used a similar approach to my beer cellar with much success. Though most people make a curing chamber out of an old fridge. Which, if I enjoy it will be the next move.

Some with specialty smokehouses and curing chambers. Also I'm in several groups that buy/sell/trade high-end booze. A lot of those guys do as well. That's what really piqued my interest lately.
