Actually headed out for dinner since gym was closed, as were most restaurants. Had a decent burger at Raffertys

Kind of enjoyed the slow pace last night at home the wife and I played cards, and she had a couple glasses of wine. We ended up making some mexican deep and just enjoyed the quiet night.

Mrs. BB did up chicken chimichanga's...a new one for us, but very good.

 

I took one of the chicken breasts, shredded and cooked some Great Northern Beans in the chicken broth, then mixed the chicken in with the beans, added some green chilis. Lunch today is perfect !

Making stuffed peppers tonight for dinner.

 

Our first attempt at them, so I'm hoping they turn out well. Recipe sounds and looks delicious.

 

Peppers turned out alright. Filling was delicious, although more sauce than the recipe calls for is needed. We need to master cooking the peppers though. After the allotted time, they were still pretty crunchy. After an additional 25 minutes they softened up quite a bit. They were good enough that we'll be giving it another try in the future.

Cut the tops off the peppers and take out the seeds and as much of the ribs as you can - or even better, slice your peppers lengthwise and remove the seeds and ribs. Then BLANCH in boiling water just long enough for them to start softening up. Drain/pat dry, THEN fill and cook in the oven as the recipe calls for.

Shouldn't have to blanch for more than 5 minutes...that extra sauce you speak of is the key. My mom use to make them and they had enough sauce you could smother your mashed potatoes with it, I believe that cooking them in the sauce at a lower temp allows them to soften. I like a very wet, stuffed pepper....Mrs. BB, not so much

My mom always cooks them very slow, but they turn out excellent

Soft shelled tacos refried beans, with all the fixings

Simple comfort food tonight. Chicken breasts coated in cornflake crumbs, baked potatoes with cheese sauce, and something green. A dark Ghirardelli chocolate square for dessert.

Stopped in at Beef O Brady's for 2 skewers of shrimp on a bed of rice.

Mrs BB hits up The Colonels Place (KFC not the Wear Blue kind) and it's on….nothing like a bucket with the game
