I have a few generic ones that I picked up at Kroger's, and I have one called "Cajun Swamp" that I picked up from Jungle Jims, but in all honesty it's pretty weak. The generic stuff has proved better IMO.

 

I'd love to try my hand at a "homemade Cajun seasoning". Mind sharing the recipe?

 

Here you go...

 

4 tablespoons salt

2 tablespoons cayenne pepper

2 tablespoons paprika

1-1/2 tablespoons onion powder

1 tablespoon black pepper

1 tablespoon garlic powder

1 tablespoon white pepper

2 teaspoons dried basil

1 teaspoons chili powder

1/4 teaspoon rubbed thyme

1/4 teaspoon ground mustard

1/8 teaspoon ground clove

 

 

I've cooked chicken, fish, and shrimp with this spice mix on them, and they all turned out great. I've gotta say, though, my favorite use for it is steak-fries in the oven, and baked potatoes. I don't think I've eaten a baked potato without it since I tried putting the two together.

Have this cooking for tonight....

 

4 medium potatoes, cubed

4 medium carrots, cut in 1/4 inch slices

1 medium red onion, halved and sliced

1 celery rib, thinly sliced

1 1/2 teaspoons salt, to taste

3/4 teaspoon dried thyme

pepper

1/2 teaspoon caraway seed

2 lbs boneless skinless chicken breasts, cubed

2 tablespoons oil

2 large tart apples, peeled and cubed

1 1/4 cups apple cider

1 tablespoon cider vinegar

1 bay leaf

 

 

Directions:

 

1 - In a slow cooker, layer potatoes, carrots, onion and celery.

2 - Combine salt, thyme, pepper and caraway; sprinkle half over veggies.

3 - In a skillet, saute the chicken cubes in oil, until browned; transfer to a slow cooker.

4 - Top with apple.

5 - Combine the apple cider and vinegar; pour over chicken and apple.

6 - Sprinkle with remaining salt mixture.

7 - Top with bay leaf.

8 - Cover, and cook on high for 4-5 hours, or until veggies are tender, and chicken is cooked.

Have not tried this yet. But thought it would be great for overnight guests coming in for graduation and such. Prep the night before, get your Kuerig set up, and wake up to a nice crowd sized breakfast.

 

Slow Cooker Sausage Breakfast Casserole

1 pkg. (26-32 ounces) frozen shredded hash brown potatoes

1 pkg. Jimmy Dean® Hearty Original Sausage Crumbles

2 cup (8 ounces) shredded mozzarella cheese

1/2 cup (2 ounces) shredded Parmesan cheese

1/2 cup julienne cut sun dried tomatoes packed in oil, drained

6 green onions, sliced

12 eggs

1/2 cups milk

1/2 teaspoon salt

1/4 teaspoon ground black pepper

Directions

1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.

 

2. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.

 

3. Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended.

 

4. Pour evenly over potato-sausage mixture.

 

5. Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.

 

Notes

Substitute 1 cup chopped fresh tomato for sun dried tomatoes, if desired.

Hey Hoops when you gonna fix me one of these slow cooker meals and bring it over? A man recovering from surgery needs some good food ya know!

This is the easiest slow cooker recipe ever!

 

3 pound chuck roast

sliced onion

16 oz jar of pepperoncinis

 

Dump the onion and the whole jar of the pepperoncinis on top of the chuck roast and cook 10 to 12 hours on low. Slice the meat and serve on hoagie buns with the pepperoncinis and a slice of provolone or swiss. This is so easy and so good. Good without the onion, too, if you prefer.

I do that recipe minus the onion; add 1 packet of ranch seasoning

and 2 packets of au jus seasoning. Very Nice.

Whether venison, beef, or pork roasts we keep our slow cooking easy with the usual carrots, onion (white or yellow), and potatoes, Season only with sea salt and ground pepper.

 

Here's the key, beer….lager, stout, ipa, have fun with it. 12-20 ounces based on the size of the roast. I'd recommend the lager first if your more of a, add a can or two of chicken broth type. You don't need to get crazy on quality. Miller Lite works just fine. Enjoy :thumb:!

Had ranch chicken tacos last night quite tasty...

2 cups Chicken Broth

Around 2lbs. boneless chicken breast

1 pack taco seasoning

1 pack ranch seasoning

Cook on medium 3 hours

Pull chicken breast apart & put back in for 30-45 minutes

 

We had salsa, cheese, refried beans, sour cream, lettuce etc.

Used soft tacos hard shells would work as well. Very Good and plent left over for tonight.

Shredded BBQ Chicken Sandwiches

 

In a Large Crockpot place Frozen or Fresh Boneless Chicken Breast (I use a 5lb bag for larger get together's)

 

Take 2 bottles of your favorite BBQ sauce (Sweet Baby Rays and Montgomery Inn are both great)

add 1 cup Brown Sugar, 1 cup Apple Cider Vinegar, 1 Tbsn Garlic Powder and 1 Tbsn of Red Pepper Flakes (I some times leave these out)

 

Mix all ingredients in a bowl and pour over chicken.

 

I cook on high for 6 hours

 

Remove Chicken and shred with forks or thongs and place in a separate bowl...add some sauce from crockpot to shredded chicken and serve on buns!

Sounds delicious. I would also have to hold back on the red pepper for my crew.
