Sliced it. Chuck roast can be subbed for brisket...it's easier to find an usually cheaper. Cook it just like you would a brisket. You can cook it to a lower temp and it can be very tasty but a tad tough.

Smoked my first whole turkey and also a small turkey breast. Breast turned out excellent. The whole turkey looked good, but it also appeared it could be dry (I normally inject a turkey but couldn't find my injector, and I don't brine). I didn't taste it, gave it to one of my ex girlfriends daughters since they didn't cook one. Waiting to hear back to see how it was. Also smoked a chuck roast which was delicious.

uhh, just realized I was backwards in my P setting statement above...lower temp and LOWER P setting gives you more smoke. So a 0 P setting means more smoke, a 7 setting is the least amount of smoke.

You have to learn the P settings and how they relate to the lower temp settings. I can put it on "smoke" mode, up the P setting and you'd think my house was on fire. Higher heat settings result in less smoke. So, a low temperature with a high P setting early in the cook gives you a lot of smoke and smoke flavor, then turn up the heat after the first couple of hours to cook. Even then you get smoke, but not as much. You have to play around a little and find that sweet spot, but it's there.

Bought me a Big Horn pellet grill from Rural King a couple of weeks ago. $339.00 during the summer, had been marked down twice, finally to $249, so I pulled the trigger and got it. I had been doing research on the pellet grills and had my eye on some waiting for them to go on sale, which smokers/grills usually do in the fall. Already used it a handful of times. I'd have to say its a better smoker than a grill, but I bought it to use as a smoker anyway so no big deal. Have done some really good ribs and chops on it, going to do a brisket this weekend, might do a pork butt for some pulled pork as well. Pellet grills for smoking are the way to go. The grill itself has functioned very well and I don't think I could have gotten a better bargain.

BINGO! I don't care who the 1A school is, typical or not, if SK is a top 6A program like they and some believe, then this game should be over before kickoff. If BW can compete or even beat them, then SK is far from where they think they are.

I was asked to do all the bbq for our employee day last week. About 15 pounds of pulled pork, 7 pound brisket, 9 chicken quarters and 2 large racks of ribs. Everything turned out delicious! Getting ready to get me a pellet grill. They have a Pit Boss model at Wal Martl with 1000 Sq. inches of cooking surface calling my name.

Ugh. Too much to say, so let me try to keep it short. Parents/kids move all the time for varying, legitimate reasons. Heck my parents moved when I was 4-5 yo because the local climate where we lived was murder on my allergies. So there are tons of legit reasons to move, and when that happens, kids should be able to play. In this particular case, I don't know what the goal or final outcome is the family has in mind, but to me if this young man has to sit, there is no one to blame but the family. My personal opinion.

Brisket is finicky, it can be very hard to get right, especially a whole packer. The flat can get done way before the point if you aren't carefull...even if you are careful it can still happen. I smoked one a few weeks back, best one yet, flavor was soooo good, might be the best Brisket I have ever had, period. About 2/3 of it was perfectly juicy and tender...about 1/3 was as dry as boot leather (all on the flat side). It's not easy to get right. I also don't wrap mine, it takes away from the flavor and bark, but it does make it a little easier to get "right".

Masterbuilt Sportsman Extra Wide. Lot wider than normal smokers, holds a ton of meat. Nothing fancy, 4 racks, one burner, unique chip burning tray that will produce smoke like a raging forest fire if you want it to. I'm getting a door insulation strip to help seal it up a little, be about perfect after that.

I have two...an electric and a propane. Don't let anyone tell you that a vertical smoker can't give a good smoke profile/flavor, because they absolutely can, and both of mine do. Now, the electric smoker won't give you the same smoke ring other smokers will (not sure why, but they don't), but an electric smoker with a good smoke box will/should give you just as good a smoke profile/flavor. Now, some of these electric smokers with tiny chip holders might not be able to, which is why I chose the electric smoker that I did, It has a huge chip box and it does an excellent job. With that said, I do prefer my propane smoker and use it more when the weather is good, use my electric smoker more in the winter and bad weather since I can put it on my front porch and use it. My propane smoker can hold a lot of meat, where my electric is smaller...it also gives me a good smoke rig, which I really like, and I can crank it up pretty hot if I want/need to. Electric will only get up to 300deg, and that's under optimum conditions. Here is an example of something I smoked on my propane smoker this weekend. Bacon wrapped pork tenderloin with my secret mustard base and sweet bbq rub. Yum yum! If you are interested in getting a smoker, I'd start looking end of the month, first of September. Most of the stores start marking down their smokers/grills and good deals are to be had. My propane smoker, depending on where you purchased it, ran anywhere from $200-250. I found it tucked away on an upper shelf last fall at Wal-Mart, marked down to $49.99. Last one of that model they had. Got me a steal on that one.

Mr. Harmon may be a wonderful guy, don't know him and can't say...but on this point he's delusional and should just be quiet and work on getting his son eligible (if possible). It's not the KHSAA'S fault he has moved at least 3 times since an 8th grader and played for 4 different high schools(counting Marshall Co.) since a 7th grader (including Tennessee). Come on man.

Your last paragraph...yes the KHSAA does. As a matter of fact the student is automatically ruled ineligible unless they request a wavier seeking eligibility. Ineligible is the 'default" setting every time until someone seeks to change it.

Exactly. Just like running back Wandale Robinson who plays at small completely nondescript Western Hills in Frankfort didn't have to go anywhere to get recruited by Alabama, Zion doesn't need to go to some super prep school to go anywhere he wants at the next level.

Collins getting big news tomorrow???
Outside of adding some depth, does anyone going from Shelby to Collins really take Collins from good to great, as the op seems to allude to? Don't get me wrong, it definitely doesn't hurt Collins, and it really hurts SC, but I don't know if it makes Collins all that much better or elevates them in the early season region rankings much if any above where they were. Now the other move in/transfer kids I don't know about, maybe they help a ton, maybe they don't, I don't know. It's all interesting for sure, and we'll have to wait and see.

Grilled at a buddies house last night...burgers, chicken breasts, brats and a couple of small NY strips. Yum yum. Got some now telling me I make the best burgers they have ever had, one asking for my recipe today as he's grilling at his sisters tonight and wanted it. Gotta say it's pretty darn good.

Anderson County 2018/2019
Learning year. "Big 3", that include all time leading scorer Cobe Penny are gone thru graduation. Long time asst. coach Bryan Hyatt takes over for the retired long time head coach Glen Drury. Good crop of JR.'s but will be small. Going to be an interesting year and I'm looking forward to it.
