October 11, 20169 yr We are not going to the game this week. It's a 7 PM game and we have to be in Gatlinburg before dark the next day. Gatlinburg is about 11-12 hours from here, depending on construction and traffic. I don't want to drive tired. I'm interested in seeing what my group will do without their fearless leader.
October 11, 20169 yr They're on the road the next 2 weeks, but the next tailgate is a fatty tailgate. Our next home game, after this weekend, is a Friday night game vs Navy. I can't get to the lot before 3:30 or 4, so we may keep it simple. I may try a fatty, though.

I'm with you there brother. We will miss the last one of the year because we go to the Homestead race. We don't miss many, but when we do, no one seems to pick up the slack.
October 11, 20169 yr Did cinnamon rolls on the waffles iron and a egg, bacon, sausage, & hash brown casserole for breakfast. A rack of wings, jalapeno poppers, and sweet pepper poppers Also made a big ole pot of chicken taco soup that I did not take pics of. . I would like a recipe for this as I can make it the crockpot. This sounds great.
October 12, 20169 yr Author I would like a recipe for this as I can make it the crockpot. This sounds great. 1.5 lbs chicken breasts 1 quart chicken broth 1 lb Turkey sausage 2 (14.5oz) cans diced tomatoes w/ onion & garlic 1 can rotel original 1 (8 oz) tomatoes sauce 3 (14.5 oz) cans chili hot beans 1 (14.5 oz) can corn, juice and all 2 packets taco seasoning 1 packet ranch mix I cook the chicken breasts in the broth the night before, and put in the fridge. Strain and keep the broth. I also brown off the sausage and put it in the fridge. The next day, tear the chicken apart with your hands. I like to shread it up pretty good. Throw everything in the crock pot with half the broth, and set on high for 3 hours or so. Then turn to warm. I use about half the broth to start , and add more if I need to. Serve with sour cream, cheese , fritos, and doritos . If you cook your chicken and sausage up the night before, it's a 5 minute throw together.
October 12, 20169 yr Author Side note on the taco soup. It freezes very well. I put it in cottage cheese containers, freeze it, and pull it out as I need it.

Just printed this off going to throw it on for the weekend. Another note on shredding chicken breasts, after cooking of course I put them in a mixing bowl and grab the mixer and it shreads them really well and quickly.
October 15, 20169 yr @coldweatherfan Props on the soup, it's really good. I through some hot sauce and a few jalapeños in mine for some added spice.
October 15, 20169 yr Author @coldweatherfan Props on the soup, it's really good. I through some hot sauce and a few jalapeños in mine for some added spice. I usually have those on the side. I have several who can't take the heat. Glad you liked it.
October 19, 20169 yr There's a ton of things you can do. I make a breakfast fatty where I scramble up some eggs and let them cool. Then put the eggs, cheese, peppers & onions, even hash browns in it, then roll it up and cook it. @coldweatherfan We have a noon game this Saturday. I want to try a breakfast fatty. I won't be using a grill, so I'll have to cook it all in the oven. What can I do to prepare the night before?
October 19, 20169 yr Author @coldweatherfan We have a noon game this Saturday. I want to try a breakfast fatty. I won't be using a grill, so I'll have to cook it all in the oven. What can I do to prepare the night before? For a breakfast fatty, I often make the whole thing the night before. Just wrap it up in plastic, pull it out in the morning and throw it i the oven. If you don't like the idea of putting it altogether. At the least: - make your bacon weave, wrap and put it in the the fridge. - put sausage in a gallon zip lock and press it out. - scrammble up or boil your eggs, and put them in the fridge. - chop up any veggies That way you can just lay out your bacon weave and start assembling. About the time the oven reaches temp, you should be ready. Throw it in the oven first thing then about the time you get packed up and ready to go, it should be ready.

I was hoping you would say I could prepare it all the night before and throw it in the fridge, so that's what I'll do. I may make one tonight to practice. :lol2: 300 degrees for how long?

Be sure to take pictures of your first fatty experience.
October 19, 20169 yr To add to what @coldweatherfan said (which is spot on) as to how I would prepare it, if you need to keep it warm during travel time or just for an extended period of time for guests at your house, wrap it in foil or pink butchers paper, a couple of towels then toss it in a cooler and keep the lid shut. It will still be at a suitable temperature (still hot) for serving several hours later. Depending on what time you plan to eat and how long it takes you to get to the tailgate and setup, you may not need to use that method. But it's a good way to keep things hot if your preparing them at home then spending a decent amount of time traveling/setting up, or waiting on guests.
