August 7, 20179 yr I found a cool and very simple idea on a grilling forum I frequent that I'll be giving a try soon. I don't tailgate much so to speak but do cook gameday foods and snacks at home when I'm not at a UK game. But anyway, steak stuffed jalapenos is what I want to try. You just cook up a tender cut of steak, ribeye should work well enough, pull out the core on the jalapenos then stuff with the grilled and diced up steak and cheese of your choice. Place back on the grill to roast the peppers and melt the cheese. I like spicy foods so I would probably go an extra step and save whatever seeds come out with the core and roll the cut up and cooked steak bites over the seeds to transfer a little more heat back into the pepper when stuffing them. Also, I like my steak medium rare, so I would likely cook it until it's at the high end of rare and then pull it off the grill and dice it up. By the time the cheese is melted and pepper is roasted it should be at medium rare temps. It's a really simple recipe that would only take around 10 minutes total cook time. I have yet to try them yet but I like steak, jalapenos and cheese. So what could go wrong?
