March 24, 201610 yr My friend brought me food yesterday, authentic Mexican food she had made herself. Chicken enchiladas , Mexican rice, black bean and corn salad. The enchiladas sauce was so good I could drink it as a soup. It was awesome. Just what I needed.
March 27, 201610 yr For Easter we had grilled fillet's, grilled mushrooms and onions and roasted baby carrots and red potatoes. Steak was great, got it at the Fresh Market in Lexington. For desert we had strawberry cobbler.

March 29, 201610 yr There were about 12 of us for dinner at my daughter's place. Below is ham, lamb skewers, scalloped potatoes, Shaved Brussels sprouts salad. Potato salad, carrots, green beans. Here is the hor dourves buffet. I'm not sure what you call those waffle looking thingies, but they tasted of licorice. Not my thing. And a carrot cake for dessert. No picture of them, but there was also roasted chicken, roasted Brussels sprouts, green bean casserole, and baked beans. The food was great. The ham came from Fresh Market. The Brussel sprout salad came from Cooper's Hawk Winery/Restaurant. The rest was homemade. Of course, my daughter is all about presentation.
April 2, 201610 yr Last night, I got some drum sticks and chicken wings. Mrs. S dusted them with sea salt and Paul Perdone salt fee seasoning. She then cooked them our new Air Fryer. Wow. I like it!!!!
April 2, 201610 yr Enjoyed very good Mexican at Cancun in Newport. The Burrito San Jose was outstanding...chicken, chorizo, beans, rice, smothered in white cheese sauce and pico de gallo. Mrs. C1 enjoyed the Enchiladas Cancun and one of the best frozen margaritas she's ever had. Two very good entrees, margarita, and a large pacifica draft and tab came to $35. 20% tip and a couple take homes boxes later and we had a fun evening out. And the rest of that burrito is going to make for a great lunch in the next couple days! Large portions, good atmosphere, and price...we'll be back frequently! :thumb:
April 3, 201610 yr We sliced up some yellow squash and zucchini, tossed the with some olive oil and garlic powder, then roasted them in the new Air Fryer. Took less then half the time it usually takes in the oven or on the grill and with much less power. They came out just the same. Ate them with hamburger paddies fried in fresh garlic and onions.
April 3, 201610 yr A cauldron of soup beans and ham. Fried potatoes and corn muffins. Same thing I fixed....:lol2: Except we don't call ours corn muffins , it is a pone of cornbread.
