Norwegian staple. My dad's grandparents were from Norway.

 

It's a potato flatbread in which boiled potatoes are rolled out flat and then baked on a large griddle. You spread butter on it and roll it up. Very temperamental to cook. Tends to stick and not work right if it's too warm or humid out.

 

When you look at one when it's come off the grill, it looks like a potato tortilla.

 

It's a staple of every Thanksgiving and Christmas in my dad's family.

Mrs. C1 bakes an outstanding pecan pie drizzled with melted dark chocolate. I'm not much of a dessert guy with the exception of Thanksgiving, Christmas, and Valentines Day.

 

I will stuff myself with dressing, mashed taters with white gravy, turkey ( every edible part ; ) ) and my sister-in-laws jalapeno corn casserole....it is FANTASTIC!

 

And since I've lost 20 lbs in the last three months I see myself riding the mountain bike this weekend for a couple hours to get back on a good foot! :thumb:

This is the first Thanksgiving at our house where we have everyone. Very unusual. It hardly ever works out due to some conflict. 22 adults and 8 kids. Whew. I love it, though.

 

I was told I was to do NOTHING, except give the stepdaughter my credit card to buy the food and refreshments. She and my son in law are making the meal. They are outstanding cooks. We are at $450 and counting. Kinda ike a wedding, what am I gonna' do?

We rotate and host every 6 years. This year is my worst option. It is the furthest away and the hubby is not a sports fan so he has a tiny TV with little seating to watch the games. He is one heck of a cook though.

I will be having an early Thanksgiving with the family of my second mom, who passed away recently. The oldest daughter was my best friend in high school. But we haven't really been friends since she moved to Florida when we were in our mid 20's. She was the maid of honor at my wedding though. Anyway...she asked me to come to their gathering at her mom's house on Wednesday, so I am going.

 

Thursday I will bake a chicken and make mashed potatoes and green beans for me and the dogs. Before I had 3 in the house I would always buy a meal from the deli at Value Market and share with my pup. It's cheaper to make the whole meal, with 3 little beggars.

 

I have so much to be thankful for. I do have the aforementioned pups. I have 2 absolutely adorable grandaughters. I have 2 amazing children who are successful, in great relationships, and very much a part of my life. My mother is in a good place financially, as are my sister's and brother. I have a really awesome job, and work for an amazing company. I am completing my first year in a home I never thought I'd be able to own. I have amazing friends who love me for my weirdness and have my back.

 

I miss my dad. That's the only thing that I could wish for. But I know he's not in pain anymore, so I'll send up some prayers that he keeps looking out for all of us.
