July 30, 201016 yr You do not have to secondary. If you do not have another vessel to use than I would just proceed to bottling. Just may want to give it some extended bottle conditioning.
July 30, 201016 yr I only have two buckets, if I rack it to my bottling buck for the 2ndary can I just bottle it from the same bucket? If I do so would I just add the priming sugar to that bucket after the 2ndary fermentation and just stir it it prior to the bottling? A bucket is a bucket. You can rack to the secondary. Then rack back to your primary when the time comes and bottle out of it. It sounds like your fermentation is probably done. Personally, I would rack it over to a secondary. If by some chance you have a stuck fermentation, racking will disturb it a little and get a litlle bit of oxygen in it, which can unstick it. Leave it in the secondary for a week. It won't hurt anything, and will clear your beer a bit.
August 1, 201016 yr I racked today, and I have to say, the yeast cake was three times bigger than my first batch, is that a good sign? I tasted it and it was hoppy but couldn't get a good read on the alcohol content.
August 1, 201016 yr Possibly, however the extra hops that made it to the primary might account for the size of the cake. Either way, if it did not taste awful out of the fermenter you probably have made a good beer. You should be able to get a rough alcohol calculation by drininkng 4 or 5. Congrats!
August 1, 201016 yr Wow! Great to see this thread on BGP! I've been brewing off an don for a couple of years. I tend to get lazy and take time off between batches. However, I just scored several cases of old flip top Grolsch bottles so I am going to star a new batch this week. I was thinking of doing a barleywine but I don't have that kind of patience. My next choice is a scotch ale. Paradise brewing is where I've gone in the past in addition to Listermans. Paradise is on Beechmont, not far from 5 mile. Also a mail order outfit called Northern Brewing, $7.00 shipping on most orders.

I just inherited ten one liter swing tops from a coworker of mine who was big into homebrewing. However, I need to replace the rubber seals. Do you think Listermann's / Paradise would have those seals in stock?
August 1, 201016 yr I believe they do I would look for silicone replacements as they will last longer.
August 2, 201016 yr Anyone have any insight on an easy way to remove old labels? I've tried soaking the bottles for up to a week but still have the darn glue residue.
August 19, 201016 yr 48 bottles resting in the dark and a bucket in the closet. I know you must have ripped into one of those bottles by now. If you have not. I am impressed with your patience.
August 20, 201016 yr Tried the dunkelweisen tonight. It was great with dinner. My only complaint was that it formed a head upon decanting but seconds later after that it fizzled away like a soft drink. Other than that, it tasted great. Was light with a very good taste. Very pleased.
