Holiday Baking Favorites? Specialties?

Even more favorite is the homemade cookie assortment that our neighbor brings us every year.:thumb:

Peanut butter between two ritz crackers, dipped in melted baker's chocolate with a red or green M&M on top. They are really good.

Been at Mom and Dad's since Saturday. I'm feeling the early stages of sugar shock.

My mom makes brown-bread every year for Christmas. Hers is kind of similar to Boston Brown Bread, both in that it's somewhat sweet, and that it's baked in a tin can, but mom's is a little sweeter and denser than most that I've had. The biggest trick is finding tin cans that 1) don't have any kind of plastic or chemical lining in them, and 2) don't have ridges...they need to be smooth-sided in order for the loaves to slide out of them. Slice it up and make a little finger-sandwich with cream cheese between a couple of slices. I'll be eating them all night long on Christmas Eve at my parents' house.

My wife makes Welsh Cakes to give away for Christmas....but they are SO much better when they're warm off the griddle. She learned about them during the year she spent living in Wales. They're in all of the bakeries and coffee shops in Wales, and they are usually described as a kind of Welsh equivalent of the English scone, although they are fairly different from a scone in my opinion. They have a texture similar to a dense biscuit, and they're made kind of like a pancake...flat, and only about 1/4" thick or so, and maybe 3" across. Traditionally they're made with currants in them, but my wife makes a variety with chocolate chips as well. They go great with a hot cup of tea or a coffee.

Mrs. Birdbrain went off in the kitchen yesterday...with a full 12 pack of Bud Light, she began in ernest to bake:

M&M Cookies, some kind of gingerbread cookie, white chocolate dipped pretzel sticks and the best, some kind of chocolate cookie with powdered sugar that melts in your mouth. As you can see, I don't really know the names, I'm more of the Supply Chaint of Christmas Cookies. I keep counting until inventory runs low....then I begin to hoard

What's your favorite thing to make during the holidays? Your go-to specialty that everyone expects each year?

What's your favorite Holiday cookie/treat to eat?

I'm hopeless when it comes to heat and yeast.

My favorite treat is homemade Danish wedding cookies. My mom called them "butterballs"; they are almost round and not flat like the store-bought version.

Mom used to bake somewhere between 60 and 80 dozen cookies each year; maybe a half dozen varieties. Butterballs, toll house, and something she called "peanut butter fingers (layers of crust, peanut butter and chocolate, refrigerated and cut into bars) were the best of the lot.
