June 12, 200719 yr Author 3-4 whole squirrels (cut in serving size pieces) seasoned flour salt & pepper to taste shortening Soak 3-4 squirrels in salt water in a covered container in the fridge for at least 6 hrs. or overnight would be better. Remove meat from the salt/soak water, rinse and pat dry In a dutch oven, cover squirrels with water and boil untill just fork tender. Remove meat from water, salt and pepper to taste and coat in sesoned flour. Fry in heavy skillet in shortening (Crisco) untill brown on all sides.

When the coals are hot (Charcoal grill) move all the coals to the sides of grill. Gas grill just leave the gas burning on one side of grill. Wash and drain chicken. Coat the chicken inside and out with seasoned salt, paprika and any other of your favorite b.b.q. seasoning. Open the can of beer, pour out a small amount - add a sprig of rosemary. Then, place the beer can into the body cavity starting at the rear end of the chicken. Carefully place the chicken (setting the chicken upright) in the center of the grill (charcoal) or, on the side not burning of the gas grill being very careful not to spill the beer (using indirect heat on this recipie). Cover the grill and cook untill chicken is done (juices run clear), this is usually about 45min. to 1 hour.

I've cooked several that way.I bought a rack that holds the beer and chicken in place and it's alot easier.

Catfish fillets 2 cups corn meal 2 cups flour 1 whole egg 1 tbsp hot sauce 1 tbsp mustard 1 tbsp lemon juice Pinch of salt & pepper Place the corn meal, flour, salt & pepper in a large bowl. In a smaller bowl, place remaining ingredients and whisk until egg is completely broken apart. Take catfish fillets and place them into liquid mixture until coated and then repeat in the dry mixture. Place in frying pan/skillet and cook until golden brown. Serve with a sliced tomato, sliced cucumber, soup beans, scallions and either a tall glass of fresh squeezed lemonade or sweet tea and you'll be in heaven!!!

July 8, 200719 yr Author 2lbs. beef round steak (venison round steak would probably work as well) 2 packets (1.27oz each) fajita seasoning 1 onion, thinly sliced 2 green bell peppers, sliced into 1/2 " strips 1 red bell pepper, sliced into 1/2" strips 1/2 can of beer Rinse steaks with cold water and pat dry with paper towels Season both sides of steak with 1 packet of fajita seasoning. Slice into strips; set aside. Add vegetables to a 5qt. slow cooker. Toss with remaining packet of fajita seasoning. Add steak strips on top of vegetables. Pour in beer. Cover and cook on low setting for 8 to 10 hours / (high 3-4 hours) Serve hot with peppers, warm tortillias, refried beans and shreadded cheese, if desired This would also be good over rice.
