I like the old one on the meal catfish. Same receipe as someone posted earlier, however, I never made it with hot sauce....I MUST try this!!!!

What's a good batter for fish, not the beer batter though, not a big fan of that.

1lb. Venison Burger

1 Can Campbells Golden Mushroom Soup

1 Can Mushrooms (whole)

(any favorite seasonings)

Rice (cooked to directions on box)

 

 

Fry and Drain Burger, (season burger with any of your favorite seasonings if desired)

Stir in Soup

Add Mushrooms

Simmer 'til desired thickness

Serve over Rice & enjoy

:thumb: Another good one Oldrambler!!! With venison & shrooms in the same skillet it has to be great.

Another that I kind of altered myself is venison chili....yummy!

 

I made it a couple times over the summer a couple years ago and really impressed my roommate...he had NO idea it was venison (he had previously said that he would NEVER eat venison so I had to surprise him with the first batch....LOL).

 

Ingredients:

 

 

3 pounds of ground venison

1 medium onion (diced)

salt & pepper to taste

1 can of chili hot beans

tomato juice concentrate (I meaure out 3 cans full...I use the emptied chili bean can as the measuring cup)

water...ONLY if needed

3 packets of dried chili seasoning

chili powder to taste

tabasco sauce to taste

 

 

Steps:

1) In a large skillet, brown the venison and onions together.

2) Once meat is browned, drain the grease and place mea & onions into a large kettle/pot that has a lid

3) Add all other ingredients except water....like I said, this is ONLY if it is too thick for your liking

4) Let the entire contents cook for about 45-60 minutes and stiring about every 10 minutes or so

5) Once chili is finished to your liking, let it sit for 10-15 minutes UNCOVERED to cool down

6) Pour yourself a nice cold beer, ladle yourself a nice bowl of chili, add crackers and/or shredded cheese and enjoy

 

 

 

If you don't tell anyone that there is venison in it, they REALLY can't tell.

 

I can still remember when my dearly departed Mamaw finally told me I had been eating venison chili for almost an entire winter. She would make it almost every Wednesday or Thursday and one day when I came back from school, she asked me to help her make it. She asked me to get some meat out of the fridge and when I looked in there I told her all I saw was this nasty looking ground venison meat. I said that I wasn't going to eat it and I would go hungry for the night. She said, "You dingbat, you've been eating venison chili for a couple months now." She started laughing her tail off when she saw the look on my face. She changed my eyes on venison!!!

Don't know if any of you fella's are gamey enough to try it but I'll give you my grandpa's recipe for fried possum. First you need to catch a possum. Put him up for a couple weeks and feed him crushed corn.(gets the kyarn out of 'em) Kill the possum and skin it remove the legs. Put the legs in a crock pot and add enough chicken broth to completely cover them. Set on medium and let cook for 5 to 6 hours. Then remove from broth, roll in flour and fry in a skillet as you would chicken.
