Everything else being 100% equal, playing better competition will, to a point, likely help your team improve. Your argument is that playing IU or UC instead of Kent State or Charleston Southern will instantly make UK a mid tier SEC team instead of a lower tier one. It gets them bowl eligible which provides them with additional practice time and another game against a team that is most likely comparable to the ones you keep advocating they add.
