December 28, 20169 yr We had ham and whole beef tenderloin (filet mignon), which was excellent. The whole tenderloin is very reasonable at GFS...we got 15 lbs for a little over $100. Used a garlic/peppercorn rub, cooked it at 500 degrees in the oven for 25 minutes and finished it on the grill to form a nice crust. Came out just under medium rare and it was out of this world. It's the first time I've cooked it, and we will certainly do this more often.
December 28, 20169 yr Author We had filet mignon last night. Husband grilled in on the new grill he bought me for Christmas. They were med-rare and perfect. We got our loin at Sams very reasonable. He trimmed them up and cut them 1 1/2 inches thick. I had left over mashed potatoes so I mixed in onion, garlic salt and KY flour . I rolled them into balls and deep fried them...they were awesome. Had shucked beans left over from Christmas.

December 29, 20169 yr We had a brown sugar ham with pineapple topping and mashed potatoes and green beans on Christmas Eve for my wife's dad and stepmom. For my family on Christmas morning we had a breakfast casserole, hashbrown casserole, bacon, and biscuits with mimosas. For my wife's mother, we will be having an assortment of appetizers this coming Sunday evening. They were all sick on Christmas so we postponed our Christmas with them to this weekend.
