November 23, 20169 yr Author So I'm injecting the turkey with my own "special blend" concoction, here is what I have decided to go with: Chicken stock apple juice that I may split 50/50 with hard apple cider honey salt pepper onion powder garlic powder siracha sauce smoked paprika ancho chili powder Bring to a quick simmer to meld all the flavor/spices together, let cool and inject. As you can see going with a sweet/a little heat theme here. This should also make a good basting/mopping sauce for the turkey during smoking as well. I am also oiling down the outside of the turkey with olive oil and coating with a nice bbq rub. Have a 11.5 pound turkey, doing all my prep work tonight and putting on the smoker in the morning.

Just tasted my injection mix...pretty darn tasty I really like it...also added white pepper and dried citrus zest to the mix.
November 24, 20169 yr How do you find papers big enough for a turkey? Papers? Of do you mean a bag to brine in? I just buy the kits, it comes with the bag.
