Does a nationwide poll have any real meaning at all? Polls from about 10 states are all that really matter, right?

Probably less than that. In reality it could come down to Ohio, Florida, and Pennsylvania. Arizona has a slight chance to flip to democrats , Michigan and Wisconsin slight chance to Republicans. Other than that I think we know what's gonna happen.

538 says to wait two weeks after the conventions have finished up to gauge polls. Those numbers tend to be the most predictive of any regarding what will take place in November.

Logic would have it that in a couple weeks we will back right back where we were, with Trump a shade behind Hillary.

I don't get polls. I don't get how there are shifts in voters week-by-week. I've never met someone that goes back and forth by the week on who they are voting for.

Only polls I would look to are the handful of swing states in play. If Trump is within 5 points heading into the election I would be nervous if I was Clinton because of the anarchy factor.
