Adventures in BBQing

Featured Replies

I ended up grilling the chicken breasts on Saturday, and by the time that rolled around, I was more in the mood for barbecue sauce instead of the bourbon & honey glaze. I went ahead and tried my own barbecue sauce and it turned out really well.

It was something like:

1 cup ketchup

2/3 cup cider vinegar

3 tbsp brown sugar

3 tbsp molasses

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper

1 teaspoon ground mustard

1 teaspoon onion powder

1 teaspoon ground ginger

1/2 teaspoon liquid smoke (I was unpleasantly surprised to find out that my roommate had killed the paprika and didn't replenish the stock :irked:...so I used this instead.)

I salted the chicken a little, left the skins on of course, and browned them over direct medium heat on the grill for about 10 minutes...then I put a tray of apple chips over the heat, coated the chicken with sauce, and set it over on the cool side to smoke for maybe 2 or 2 1/2 hours until it was up to temp.

And where was my invite, lol.

Still working on perfecting the craft. I do make some mean pulled chicken barbecue, though (if I do say so, myself). I may have to extend some invitations the next time I make that...especially seeing as the barbecue sauce will probably be something of my own creation now instead of some doctored store brand stuff.

I went a completely different route with my BBQ sauce this time. I started with ketchup, but this time used Root Beer, lemon juice and Worcestershire in it as well with some dry spices and a touch of ginger. The sauce tastes pretty good...I just hope the pulled pork turns out great too!

Grilled some pork chops the other night using a friend's coffee spice rub. I'd never had anything like it before...very unique. I'll definitely be adding that rub-recipe to my recipe catalog. I'll ask him if he minds my posting it on here and get back to you - otherwise, it's not too tough to find similar coffee rub mixtures to his with Google.

Making some pretty simple pork chops over the grill tonight. Just marinade in balsmic vinegar and garlic seasoning. Its easy and one of my favorites.
