January 30, 201412 yr Author duck breast marinade. 1/4 cup Worcestershire sauce, 2 tablespoons olive oil, 1/2 teaspoon hot sauce, 2 tablespoons minced garlic, 1/4 small onion chopped fine, 1/4 teaspoon black pepper. Marinade over night. I use a little bacon grease or butter, I like bacon grease, in a skillet on medium heat, cover and cook for about 4-5 minutes on each side, or simmer in beef broth and red wine until done. You can pound them thinner, and reduce the cooking timeI'll give that a shot. Does the hot sauce overwhelm? Have you tried it without?

I have not had it without. If your not a fan of the hot sauce, I would not leave it out, cut it to 1/4 tsp. I sometimes replace the hot sauce with a chopped jalapeno pepper. I like it hot. My son sometimes wraps the breast in bacon as well, but not always. I'll be honest, I'm not a big fan of duck. This however seems to be my favorite way to prepare it. I would just make 1 or 2 breasts and see what you think. The marinade is cheap to make, and you don't waste a bunch of meat.
