Marinade in generous amount of Lea & Perrins with some onions and a little black pepper (or Cavender's Greek Seasoning for a tad extra zip) for at least two hours in the fridge. Switch to charcoal. Heat coals in a tower until white. Remove steaks from fridge while coals are heating. Spread coals evenly around grill. Make sure rack is clean. Set rack approx. 2 inches from hot coals. For soft pink middle (med. rare to medium) grill steaks 5 min. on one side, with the last 3 minutes covered to reduce flames, then flip using tongs and do 3 total minutes, the first 2 minutes covered. Do not leave the steaks while cooking. Remove from grill and serve immediately with marinated mushrooms (cooked over low heat with butter, Lea & Perrins, a dash of soy sauce, and a little pepper) baked potato (clean potatoes baked at 475 for approx. 45 minutes, no doggoned foil), tossed green salad, and a bottle of wine. Ravenswood has a good 2005 Cab that retails for under $15 at Liquor Barn. Chocolate cake from scratch for dessert. Retire to bedroom and permit wife to thank you for being a grilling god.
