Otherwise, I would just think she's crazy. The way I hear it, I was pretty much right on the money. OK...this comment earns you a pass......but just this once. Knowing your source, I do not doubt but that the story was passed on to you in a highly embellished way. Please, share with the rest of us your award winning recipe. I'll even buy a toaster oven in honor of your ¼ pound culinary triumph. :banana: Look, #1...my oven isn't working on the stove. It hasn't been that big of an issue until the night I wanted to make the pound cake. #2...The only thing I needed to do was adjust the temp...still works quite well. #3...Yes...I burned it. HOWEVER, I resourcefully thought to slice the burned edges off and return it to the oven (with the lowered temp), and it baked quite well with no further mishaps. AND it was NOT 1/4 lb. It was a full sized loaf cake. #4 The recipe is: 1/2 lb butter-Creamed 1-2/3 c sugar-add a little at a time while whipping into the creamed butter 5 eggs-add 1 at a time, blending each well into the butter/sugar mixture. Stir in the following 1 tsp Vanilla 1/2 tsp salt 2 c flour Spoon into a loaf pan, and cook on 325 for 1-1/4 to 1-1/2 hrs. (in a regular oven) Quite tasty. If using a Toaster oven, I advise you to lower the temperature to 300.
July 9, 200719 yr Author RM, I could have sworn the recipe you PMed me was this: 1 3/4 cups (230 grams) cake flour, sifted 2 teaspoons baking powder 1/8 teaspoon salt 1 cup (226 grams) (2 sticks) unsalted butter, room temperature 1 cup (200 grams) superfine or castor sugar 4 large eggs, room temperature 2 teaspoons pure vanilla extract Zest of a lemon or orange (optional) Preheat toaster oven to 350 degrees F. Butter or spray with a pan spray, a 9 x 5 x 3 inch loaf pan. Line the bottom of the pan with parchment paper and butter or spray the paper. Set aside while you prepare the batter. In a large bowl, sift together the flour, baking powder, and salt. Set aside. In the bowl of your electric mixer, or with a hand mixer, beat the butter until Amnesty International makes you stop. Gradually add the sugar, beating continuously on medium-high speed until light and fluffy (this will take way too long). Scrape down or lick sides of bowl as needed. After about five minutes the batter should be light in color and fluffy in texture. Then add the eggs (free range, cruelty-free only), one at a time, mixing well after each addition. Scrape down the sides of the bowl or lick some more as needed. You will notice that the batter will look curdled. Don't worry as the batter will look much worse after it's cooked. Add the vanilla and lemon zest, if using, and beat until incorporated -- also works in unincorporated areas. Add the flour mixture and mix just until incorporated. Pour the batter (mixed up goop -- not guy with bat) into the prepared pan and smooth the top. Bake until you smell smoke, or the fire alarm sounds. Test for doneness with toothpick. Toothpick should come out on fire. Remove the cake from the toaster oven and place on a wire rack to extinguish flames. Remove the cake from the pan and cool completely. Scrape off thick layer of char from top of under-cooked batter and return to toaster oven. Cook again at 275 degrees until cake begins to look edible. Remove cake, scrape off char from bottom and sides and serve...to people who won't sue you. Well wrapped, will keep until end of time. Concealed-carry legal in most states. Makes about 1/4 of a 9 x 5 x 3 inch loaf.
