Homemade Salsa...who does it? Recipe recommendations.

Featured Replies

Made our first batch of the summer this past weekend.

So delicious. Think we'll probably end up cutting back on the sugar and vinegar for the next batch as it has a pretty sweet taste to start, then the heat of the habaneros and jalapenos hit.

The second is called Rainbow salsa. It's a bunch of fresh, healthy, and colorful ingredients that combine to make a tasty salsa. You could add edmame, chick peas, or any other number of things to it. This is the recipe that was given to me.

3 roma tomatoes, cored and diced

1-2 jalapeno peppers, seeded and diced (add more/less to taste)

1 large red bell pepper, seeded and diced

1 large orange bell pepper, seeded and diced

1 large yellow bell pepper, seeded and diced

1 (15-ounce) can black beans, drained and rinsed

1 (15-ounce) can whole kernel corn, drained

1 cup chopped fresh cilantro, loosely-packed

2/3 cup chopped red onion

1 large lime juiced (2 TBL spoons)

1/2 tsp garlic powder

1/2 tsp ground cumin

1/2 tsp salt

1/2 tsp fresh black pepper

It's pretty much just dice, mix, and serve.

I found this on the Internet. Really great for wraps or as a dip.

Mango salsa

• 2 ripe mangoes, peeled and chopped

• 3 very ripe roma tomatoes, chopped

• 1 sweet red peppers or 1 yellow sweet pepper, seeded and chopped

• 1 serrano pepper (only use as much as the amount of heat you can take)

• 2 green onions, chopped

• 1/4 cup chopped fresh cilantro

• 1 lime, juice of

• 1 -2 tablespoon sugar (if your mangoes aren't very sweet)

• salt and pepper

Ours is....

4 cups diced onion

1 diced sweet red pepper, 1 diced sweet yellow pepper, 1 diced sweet orange pepper

4 small cans of tomato paste

4 cups diced tomatoes

1 bunch of cilantro

6 jalapenos pureed

2 habaneros pureed

1 diced chipotle pepper

4 diced banana peppers

1/2 cup brown sugar

1 cup sugar

3 1/2 cups vinegar

1 cup lime juice

salt to taste

3 Tbsp minced garlic

Boil everything but the white sugar for 20 minutes, then add sugar and salt and simmer for another 15 minutes.

That looks like it makes a bunch. I have an event coming up and I think I will give it a try.

Love different salsas! I am going to try them all.

It makes a fairly large pot....Usually takes us about a month and a half to eat and we eat it fairly regularly.

I'd scale back the sugar and vinegar though unless you like it sweet. It's got a sweet and bit of acidic taste at the start. We like it that way, but could be a bit much for some.

Also, 1/2 cup of the vinegar is used with the jalapeno and habaneros when you puree them.

My typical is to replace sugar with honey at a lesser amount, but I almost always make every recipe exact the first time. So I will do as you said and cut sugar and vinegar by 1/3 and go from there.
