Think I'm going to make some more of this this weekend. Might tinker with the recipe just a little...cut down on the red pepper flake a tad, and add some white pepper to the mix.

So, smoked two salmon fillets Saturday night, adjusting my spice mix a little...less red pepper flake, little more course ground pepper, cracked pepper corn and dried lemon peel, and added a little white pepper and ancho chili powder to the mix. Had a wild caught sockeye salmon fillet, and a farm raised fillet. They are quite different, the wild caught does have a stronger flavor for sure. Both turned out excellent! My smoker would not get as hot as I like, think I have a bad tank and the flow rate is bad, so kept them on the smoker longer than I normally would, about 2 1/2 hours. Very good smoke flavor (mix of hickory and apple wood chips) and the spice rub (laid it on heavy) was spot on. If you are a salmon fan I think you would really like it.
