Soft serve has the exact same ingredients as hard ice cream.

 

The only 2 differences are air and temperature. Soft serve has air whipped into it and is typically in the 20-25 degree range. Hard ice cream has as much air as possible worked out of it and should be around 10 degrees.

 

If you take a bowl of hard ice cream and whip it. It will become soft serve.

 

If sales are slow, and it is in the machine for too long, it will get over whipped and lose flavor. The busier a place is - the better the soft serve will taste.

 

It also typically has less fat content...like I said, it's a type of ice cream, but if you think soft serve and Hagendaz(or any other quality ice cream) are the same...well I'm not sure what to say.
