October 30, 20187 yr One of our favorites, and it jumps to the top of the list for me because of ease, is an Italian Chicken we make. Throw some chicken breasts in a baking dish, dice up a handful of potatoes, throw in some baby carrots, and broccoli florets. Season with Italian seasoning, pour over 1 melted stick of butter and as much or as little Italian dressing as you desire. Cover with foil, and bake for an hour. End result is pure deliciousness.

We do something very similar. I'm a big fan. We will also take a similar approach with fresh mixed veggies just for a side to certain dishes. Covering with foil steams them up real well and the seasoning is fantastic.

We use flour, garlic salt, white pepper, paprika, poultry seasoning, salt, eggs, and beer. Put the beer, a little flour and the eggs together as your wet mixture (thick like a buttermilk) and the rest as your dry. We soak the chicken all day in salt water and then place it directly in the dry mix for a thin coat, take it out and then wet mixture to dry, twice. Deep fry it like you would anything else.

October 30, 20187 yr Author That sounds fantastic! It's pretty solid. The outdoor deep fryer is key here. A lot less splatter mess, the breading mess is outside, etc.
October 30, 20187 yr Shredded BBQ Chicken Sandwiches (5 minutes prep time) 3lbs of chicken breast (you can use frozen without thawing them first) 1 cup of apple cider vinegar 1 cup brown sugar Pepper Flakes (optional) Baby Rays BBQ Sauce (or your favorite) Place chicken in a large crock pot, mix vinegar and brown sugar then pour over the chicken. Add BBQ sauce to cover almost all of chicken then pepper flakes if some heat is desired. Set on high and let cook for 6 hours. Remove chicken and shred with a fork and place in a large bowl. Use sauce from crockpot or fresh sauce to wet the chicken and serve on a bun (King Hawaiian). Edited October 30, 20187 yr by Jumper_Dad
