I guess they felt like it was tougher looking mascot if it showed the meat that is going to be packed by the packer...prior to being slaughtered?

Exactly. Just like the Green Bay Packers, though the Green Bay bunch were named after the Indian Packing Company, packers of Counsil Canned Meats.
